Chicken Cacciatore

Quantity: Serves 4
Ingredients:
3 lb. chicken, cut up,(or 3 1/2 lb. mushrooms
lb. chicken pieces)
2 large onions 2 cloves garlic
1 lb. tomatoes salt, pepper
1/2 cup red wine 2 tablespoons oil
1/2 teaspoon oregano
Instructions:
Heat oil in a pan and add crushed garlic, sliced onions and
mushrooms; brown lightly. Remove and reserve.
Add chicken pieces and brown on all sides. Return onion and
mushrooms to the pan. Peel and chop the tomatoes and add
with the salt, pepper, oregano.
Pour in the red wine, bring to the boil; reduce heat, and
simmer for 1/2 hour.
Uncover and simmer for 15 to 20 minutes longer or until
sauce is reduced and
chicken very tender.
Comments:
I haven't made this for years, but it was very good. Serve
with noodles or fluffy rice and a green salad.
